    Adjust rack to middle position and preheat oven to 425 degrees. **Wash and dry all produce.** Halve green bell pepper unit lengthwise; remove stems and seeds. Trim, peel, and grate carrot on a box grater. Trim and thinly slice scallions unit, separating white parts from green tops. Halve gouda cheese slices.

    Heat a drizzle of olive oil in a large pan over medium-high heat. Add ground beef and scallion whites , along with the grated carrot. Season with salt and black pepper.
